P3 Taco Pizza
Just when you thought I'd had enough pizza, I tell you there is more! I was in the mood for tacos, so I adapted my favorite pizza recipe and it was AMAZING! Seriously, one of the best dinners ever. I could easily see myself eating low-carb forever with food like this.
Taco Pizza Crust
1 Tbsp Coconut Flour
1 Tbsp Flax Meal
1 Egg
1 cup Colby/Jack, Cheddar or Monterrey Jack Cheese, shredded
1/4 tsp Garlic Powder
1/4 tsp Cumin
1/4 tsp Chili Powder
1/8 tsp Cilantro
Taco toppings
Preheat oven to 350*. If you use a pizza stone, preheat it in the oven as well.
Mix all ingredients well and press onto parchment paper into a circle about 1/4 inch thick.
Bake for 15 minutes. If you didn't use the pizza stone method, flip crust and bake another 15 minutes on the other side, or until crispy and done on both sides.
Top crust with seasoned ground beef and cheese, and return to oven to melt cheese.
Remove and add salsa, diced tomatoes, lettuce, sour cream, guacamole, etc.

This looks yummy! Question for ya--what is the consistency of the baked crusts like this? Is it chewy, crunchy? :) Just curious! One more week til I hit P3, Woo hoo!
ReplyDeleteThis is my favorite, I think. I just love it. This crust, and the coconut flour pizza crusts are chewy, but strong enough that you can pick them up with your hands at eat. Of course, the taco one I piled so high with toppings that I had to use a fork, but with the regular pizza you can pick it up and it holds its shape. So yeah, I would say chewy rather than crunchy. Maybe a little crunchy, but not crispy like a thin crust. Does that help? LOL :) Yay for P3 coming up!
ReplyDeleteyes that helps :) I was concerned about the chewiness b/c of my tmj--I'm not supposed to eat anything chewy ;) But this is looking so good I'm gonna have to try it out!
ReplyDeleteAh gotcha. I don't think you need to worry about that. :) It isn't like super thick pizza crust with gluten that you have to chew for a long time. I can't wait to hear what you think!

Can I make this into a casserole. Just put the pizza crust in a deep dish pan, bake it then load it up?
ReplyDeleteThis is a follow up comment to my earlier one. I just pressed it into a baking sheet. I accidentally used wax paper instead of parchment paper. Oh my that was a mistake. Took me and SIL 30 minutes to pull it off the bottom of the crust. The outcome however, was delicious. My husband said it was the best he has ever had. We topped it with lettuce, tomato,onions,hot sauce and sour cream along with seasoned beef and cheese. Very very filling. Probably should have ate less:)
ReplyDeleteI'm sorry I missed your previous question! That sounds like a delicious idea to make it into a casserole. I think I would want to blot off some of the grease from the cheese, though, which might be tricky with it pressed into a pan.
