P2 Strawberry Vinaigrette
I like salad ok, but I don't eat naked salad. My favorite dressing is ranch, and I have since been making a pretty amazing ranch dressing that I have been successfully eating on P2. However, in my first HCG round, I wanted to stick to all of the rules so I came up with a delicious strawberry vinaigrette that is great on any kind of salad, especially spinach. Throw on some sliced hardboiled egg and it's a fantastic lunch.
Strawberry Vinaigrette
1 lb strawberries, hulled (frozen is fine, just thaw partially)
1/4 cup apple cider vinegar
juice of one lemon
15 drops Liquid Stevia
Blend all ingredients. Adjust amounts for your own taste, of course. Makes 20 oz.

Oh my goodness, this is so great! I've been looking for recipes online (even mildly rogue ones) and these recipes are fantastic! Thank you so much!
How much of this vinaigrette do you use on one salad serving?
Michelle, I don't measure, I'm sorry. Just enough to coat the salad a little bit without being heavy? Not very helpful, I know!
When you use this dressing, does it replace your fruit choice? Or, can you still have your fruit for that meal?
I only use a small amount, so I don't usually count it. I would if I used a lot, though. I guess my recommendation as a fellow HCGer would be to put the amount in your calorie count for the day, and then decide if you have room in your total daily calories for a full fruit serving.
Pardon my ignorance, but what does rogue mean?
OMG, this blog is a LIFESAVER! I was getting so tired of mustard/vinegar dressings! Thanks so much!! I'm using nearly all of your recipes!
Rogue means that an ingredient in the recipe isn't specifically listed in the Simeons protocol, but many people (including myself) ate it without any issue. :)
This is wonderful. Used with 3 sliced strawberries on baby spinach. Also used with shredded cabbage.
Question: Have you ever put dressing in ice cube tray and frozen it to make it last longer? Wondering how it would thaw and consistency etc.
