Using diced chicken in chili made for a nice change in this meal.
Chicken Chili
3.5 oz Chicken breast, diced
1/2 cup Onion, diced
1 clove Garlic, diced
1/2-1 cup Water
1/2 cup Tomato Sauce
1 large Tomato, diced
1 tsp Cumin
1/2 tsp Chili Powder, to taste
1/2 tsp Cilantro
Salt and Pepper to taste
In a medium sauce pot or pan, cook chicken with onion, garlic and water until chicken is done. Add water as needed to keep things moving around. Add tomato sauce, diced tomato and spices. Allow to simmer until tomatoes are cooked and the mixture thickens.

ReplyDeleteFor this recipe specifically, I counted the tomato and sauce together as one veggie (technically a fruit, but for the purposes of protocol I will use it however I need it). So for Chicken Chili, I count it as 1 protein and 1 veggie.

ReplyDeleteI personally don't count onions and garlic as "vegetables" on HCG - I count them as spices. So in that case it doesn't count as mixing vegetables.

ReplyDeleteMY phase 2 says I can only pick 1 ONE vegetable PER MEAL so it's either the onion or the tomato but not both :(
ReplyDeleteDid this without the onion (used onion powder instead) and it was delicious!!! I am in my second week of phase two down 12 pounds so far. I have been sticking to only eating chicken, shrimp, cod and scallops because I find that when I eat beef, I stall. This recipe was a Godsend!
