P2 Chicken Chili
Using diced chicken in chili made for a nice change in this meal.
Chicken Chili
3.5 oz Chicken breast, diced
1/2 cup Onion, diced
1 clove Garlic, diced
1/2-1 cup Water
1/2 cup Tomato Sauce
1 large Tomato, diced
1 tsp Cumin
1/2 tsp Chili Powder, to taste
1/2 tsp Cilantro
Salt and Pepper to taste
In a medium sauce pot or pan, cook chicken with onion, garlic and water until chicken is done. Add water as needed to keep things moving around. Add tomato sauce, diced tomato and spices. Allow to simmer until tomatoes are cooked and the mixture thickens.

Do you count the tomato sauce/paste in your recipes?
For this recipe specifically, I counted the tomato and sauce together as one veggie (technically a fruit, but for the purposes of protocol I will use it however I need it). So for Chicken Chili, I count it as 1 protein and 1 veggie.
Awesome. One more question, for the strawberry vinegartte do you count it as a fruit?

You can eat the whole thing! :) I count it as 1 protein and 1 veggie

I have made the chicken chili twice and was so full after eating (something I never thought would happen in phase 2).
I plan on making the chicken fingers next :)

I thought tomato paste is not allowed?
Hmm, I haven't heard that before. Why wouldn't it be allowed since tomatoes are allowed?
Finding your blog was a god send.....tomorrow is Day 10 for me on Phase 2 and I was getting so bored trying to eat the allowed foods in their plain state I didn't know how I was going to go on.....now I'm off to the grocery store so I can try all of your recipes......thanks a billion!!!!
in hcg there was mention, don't mix vegetables in a meal?? so mixx what?? i am very confused about recipes!
I personally don't count onions and garlic as "vegetables" on HCG - I count them as spices. So in that case it doesn't count as mixing vegetables.

MY phase 2 says I can only pick 1 ONE vegetable PER MEAL so it's either the onion or the tomato but not both :(
Did this without the onion (used onion powder instead) and it was delicious!!! I am in my second week of phase two down 12 pounds so far. I have been sticking to only eating chicken, shrimp, cod and scallops because I find that when I eat beef, I stall. This recipe was a Godsend!
