P3 Flax Crackers



One thing I miss when I'm on the HCG protocol is crunching. Crackers, chips, nuts - they are all out during Phase 2, and most of them are out during Phase 3 as well. Bringing back cheese for Phase 3 is wonderful, but I've still been missing a nice cracker to go with it, so I got out my dehydrator and made some flax crackers. They turned out pretty good... especially with a slice of sharp cheddar on top. I think with more seasoning they would be fantastic so I plan to keep playing with this recipe.

Basic Flax Crackers

Soak 2 cups of flax seeds in water overnight. I didn't measure the water, just made sure there was plenty to cover and then another inch or so.

Add 2 tsp salt and any seasonings you'd like. I threw in some basil and oregano and would add more next time, so plan on about a tablespoon of each. Add more water if needed to get a spreadable consistency.

Lay parchment paper on the dehydrator tray, pour on the flax goo and spread it around. This recipe made one tray for me.

This is what it looked like:



Dehydrate at about 110* until it's completely dry. It took about 18 hours here in humid Florida.

Cut (I used scissors) or break up into crackers when dry and store in an airtight container.

hmmmm...I wonder if there is anyway you can make these in the over. I don't have a dehydrator, nor do I have room in my kitchen to store one.

Hi! I think you can just set your oven as low as it will go, and maybe leave the door cracked so it doesn't get super hot. I recently dehydrated some almonds in my oven this way and it worked pretty well.

I will be on P3 in a few weeks and am so glad that I found your recipes, as I usually get bored in P3 quickly and start cheating. The one thing I really miss aee Cheezit crackers. Is there a way to give these crackers some cheese flavor?

You could try adding some nutritional yeast to the mixture. It may be considered rogue but it does give a cheesy taste that is healthy. I'd give it a go. :)

I've also heard of buying American cheese from the deli, freshly sliced, and microwaving squares of it until crispy. I don't own or use a microwave so I haven't tried it, but it might be a P3 option for you if you do!
