P2 Cabbage Meatball Soup


I just threw this one together and looooved it!

1/2 cup Water
1/2 cup Fat Free Beef Broth
1 tsp oregano
1 tsp basil
1-2 Tbsp tomato sauce, optional
2 cups Cabbage, chopped or shredded

Mix water, broth and spices. Cook cabbage in broth until done.

Mix meatballs and bake while cabbage is cooking:

Meatballs

3.5 oz ground beef
1 Tbsp bread crumbs
1 tsp milk
1/4 tsp onion powder
1/4 tsp basil
1/4 tsp oregano
1/4 tsp garlic salt
pinch pepper

Preheat oven to 425. Combine all ingredients in a bowl. Form into small balls (I get 8-10 in a batch.) Place on baking sheet and cook 7-9 minutes or until done.

Drain meatballs on paper towel and add to soup. Super simple! Salt and pepper to taste.

  3. This was fantastic! I actually made your meatloaf recipe rather than meatballs as my family voted meatloaf! I had the cabbage soup with mine. I also included Miracle Noodles since I know I don't stall on them.

  4. I do these without the bread crumbs and milk, with a bit more spices, sauteed in a spray of coconut oil and tblsp of broth (carmelized down) and they turn out amazing!

    1. There is a daily allowance of cracker/breadstick so you can use that. It's about a Tbsp if you crush it. You can also leave them out if you prefer.

  9. Yes it is for Phase 2, when you are keeping your calories super low. You would just need to make sure the other food you eat the same day is not very high in calories (basically, have chicken and not beef)
