P3 Flax Crackers



One thing I miss when I'm on the HCG protocol is crunching. Crackers, chips, nuts - they are all out during Phase 2, and most of them are out during Phase 3 as well. Bringing back cheese for Phase 3 is wonderful, but I've still been missing a nice cracker to go with it, so I got out my dehydrator and made some flax crackers. They turned out pretty good... especially with a slice of sharp cheddar on top. I think with more seasoning they would be fantastic so I plan to keep playing with this recipe.

Basic Flax Crackers

Soak 2 cups of flax seeds in water overnight. I didn't measure the water, just made sure there was plenty to cover and then another inch or so.

Add 2 tsp salt and any seasonings you'd like. I threw in some basil and oregano and would add more next time, so plan on about a tablespoon of each. Add more water if needed to get a spreadable consistency.

Lay parchment paper on the dehydrator tray, pour on the flax goo and spread it around. This recipe made one tray for me.

This is what it looked like:



Dehydrate at about 110* until it's completely dry. It took about 18 hours here in humid Florida.

Cut (I used scissors) or break up into crackers when dry and store in an airtight container.

P3 Onion Bread



A local vegan restaurant serves an amazing sandwich on dehydrated onion bread, and ever since I got my awesome Excalibur Dehydrator, I've wanted to try making some, but never got around to it. Since being on HCG I haven't had any bread, so I decided this Phase 3 would be a great time to try it out. It turned out great! You can dry it out in your oven on the lowest setting if you don't have a dehydrator.

Onion Bread

3 lbs Onions, chopped
1 cup Raw Sunflower Seeds, ground
1 cup Flax Seeds, ground (or use Flax Meal)
1/2 cup olive oil
1/4 cup Bragg's Liquid Aminos
Parchment Paper

Mix all ingredients, adding a little water if needed to make it spreadable. Spread onto parchment-lined trays.



Dehydrate at 115* until mostly dry. (This was about 12 hours in humid Florida.) Flip over, peel parchment paper off, and dry a few hours longer. Cut into squares and store in airtight container. This recipe made 2 1/2 trays for me.
