P2 Spaghetti (rogue)
One of the things I miss on HCG is pasta. Our family enjoys several pasta dishes and sometimes it's hard to watch my family eat them when I can't, even though it's just for a little while.
This recipe is considered "rogue" because it includes zucchini. I haven't had any issue eating zucchini on Phase 2, so I'm sharing it. Use your judgment for yourself.
The spirooli slicer is so much fun to use and it's easy enough that my 6-year-old loves to do it. It makes thin or thick "noodles" from many kinds of fruits and veggies.
Here is my zucchini!
Spaghetti Sauce
3.5 oz ground beef
1 Tbsp onion, minced
1-2 cloves garlic, minced
1/2-1 can diced tomatoes, or 1-2 fresh tomatoes, chopped
1 tsp basil
1 tsp oregano
Brown beef with onions and garlic. Add tomatoes and spices, and let simmer at least 10 minutes. The longer it simmers the more flavorful it will be.
You can add the noodles to the sauce pot to heat through, or if you prefer your zucchini to be crunchier, pour the hot sauce over the zucchini noodles.

Thanks for the recipe, I used the miracle noodles and it was wonderful, just like eating "real spaghetti"!!!
I read that the Shirataki noodles made with yams - NOT tofu! - were not considered rogue since they are Japanese yams, which don't have bad carbs. These are great for folks like me who are sensitive to tofu. They are found in the chilled section of Whole Foods in a bag with liquid.
They have zero calories and are gluten free since they are made from Japanese yams.
I'm eager to try making a spaghetti with them!
You can also use cabbage for noodles =) Just slice it extremely thin and boil it .. then add the sauce.. it's also very yummy and is not considered "rogue" =)
I tried it at home - hmmmmmm, wonderful. It was so good even my man had it for dinner. Question though, what if sautee the zucchini after shredding them in 1 tea spoon of coconut oil? I need your opinion on coconut oil use ( of course miniature quantities). Some claim it is actually good when on P2?

Delicious....Spaghetti Zucchini is great, thanks, had it for lunch....I think I will make it for dinner too, this lifestyle change is not so bad, I'm down 35lbs just after 18 days on hcg, if I can make it through p2, p3 will be a breeze, I've never been a big eater, I just like tasty foods. I appreciate you taking out the time to share....hoping that I will be able to do the same.

looks yumm.I was wondering if it was ok to mix vegetables like in this recipe? i have been told to eat only one type of vegetable per meal? tomatoes and zucchini combo? Thank you
