P2 Stuffed Pepper (rogue)


My friend made herself a stuffed pepper on Phase 2 and declared it "total comfort food" so I had to give it a try. Green pepper is not specifically allowed on Phase 2, so use your own judgment. Or just eat it on P3 and put cheese on top because that would be delicious.

Stuffed Pepper

3.5 oz Ground Beef
1 Tbsp Onion, minced
1-2 cloves Garlic, minced
1 Bell Pepper, top and seeds removed
1/4 cup Tomato Sauce
2 Tbsp Tomatoes, diced
1/2 tsp Basil
1/2 tsp Oregano
salt and pepper to taste

Preheat oven to 350*. Mix basil and oregano into tomato sauce and set aside. Cook ground beef with onion and garlic until done. Add diced tomatoes and stuff the pepper. Pour tomato sauce on top and bake about 25 minutes or until pepper is done as desired.

I've always loved stuffed pepper. I like the Greek version - which is purely vegetarian. I've never tried the meat lovers version though.

This was delicious!!! Thank you so much for the recipe. The only thing I will do differently next time is to make a requested change by my husband which is to poke a hole in the bottom of each pepper so as they cook the water will drain out. Honestly this is the first day on P2 when I have been full after dinner (peppers are not rogue on my program). Thank you SO much!

Is this aloud on phase 2?

It's up to you - I never had any issue eating it on P2. It is listed as "rogue" because it is something not specifically mentioned on the Simeons protocol but many people eat peppers without trouble, including me, so I posted it. :)
