P3 Coconut Flax Cheesy Pizza Crust

Ohhh, this pizza crust was even better than the last! Same basic instructions, but slightly different ingredients. I also added some garlic and basil to the crust and loved it. With just coconut flour, you get the essence of coconut when you eat it, which is not so good for those who don't like coconut (like my husband). The garlic and basil in this crust, plus using only half the coconut flour, completely masked the coconut taste and smell and my husband gave it a thumbs-up. This crust is also a thick and easy to pick up and eat by hand, and the flax makes it feel more hearty.

Coconut Flax Cheesy Pizza Crust (personal pizza size)

1 cup Mozzarella Cheese, shredded
1 Egg
1 Tbsp Coconut Flour
1 Tbsp Flax Meal (grind flax seeds in coffee grinder or vitamix)
1/4 tsp Baking Powder
1/8 tsp Garlic Powder
1/8 tsp Basil

Preheat oven to 350*. If you have a baking stone, put it in the oven to preheat as well.

Mix cheese, egg, coconut flour, baking powder and spices until well combined.

Press out on a piece of parchment paper to about 1/4 inch thick. Pick up parchment and stick it in the oven on the hot stone. If you don't use the stone method, put the parchment on a baking sheet and into the oven.

On the stone, 15-20 minutes should be enough to cook both sides of the crust. On a baking sheet, bake about 15 minutes, then flip the crust over to bake the other side for another 15 minutes or until it's golden brown.

Remove from oven, top with sauce, cheese and toppings (meats should be precooked) and return the pizza to the oven to melt the cheese and warm up the toppings.

Are there any other ways to make gluten free pizza?

Lianne said...

Sure, but on HCG you have to make sure they are low-carb as well. Phase 3 means no starch or sugar, so the usual gluten-free flour, rice flour, won't work for the HCG protocol.

Are you able to pick this up and eat it or do you have to use a knife and fork? I made cauliflower pizza and it was mushy.

You can pick it up and eat it! The cauliflower crust I had before was mushy too. Tasty but not crispy like pizza should be. This crust is my favorite!

I know its fine for phase 3 of HCG but you really need to list calorie and carb fat fibre and all that stuff. Can you do please?

Sorry, no, I'm not a dietician, and I don't determine serving size so I don't list those details on any of my recipes.

@Liz - if you use myfitnesspal.com you can "add the recipe" -- just put in all the ingredients & how many servings (slices) you cut it into -- then the app/website will calculate all those dietary numbers for you.

Will this crust stay crispy if I make it in advance (say earlier in the day) then add toppings and bake it later?

I made this yesterday and I was pleasantly surprised at how well it turned out. My only problem was that my cheese stuck to the parchment paper. I think it was cheap but anywho it was good and I liked it. Thx you:-)

HI there, I just made this and my biggest issue was that it completely stuck and was very hard to separate. Any suggestions on that?
