P2 Egg Salad


I keep hardboiled eggs in the fridge for times I have to go somewhere and didn't plan ahead for lunch, or if I just need something quick at home.

Egg Salad

4 Hardboiled Eggs (discard 3 yolks), finely chopped
1 Tbsp Milk, Mayo or Ranch, depending on your comfort with bending the rules
Squirt of Mustard
Salt and Pepper to taste

Mix everything up as desired and serve over lettuce leaves. Quick and yummy!

easy! I'm filing this away for my next round. I never had any problem using the ranch (your recipe) and it really adds a nice punch to otherwise boring food. :)

I personally use the ranch dressing I make, which is posted on this site. It's a rogue ingredient so you'd have to be careful trying it to make sure it didn't cause you any issues, but I love it and it worked well for me. http://myhcgcooking.blogspot.com/2011/02/ranch-dressing.html

YES Eggs are allowed in P2! You can have it for your protein - the recipe is a P2 protein serving, 4 eggs but only one you get to keep the yolk, so discard 3 yolks. Use that one yolk to make the filling mixture for your deviled eggs. It's a great, filling meal on P2.

Thanks for posting these recipes. They look great. I'm going to try the egg salad for lunch today. I have a couple of questions. The HCG documentation I was given by my doctor says I can only have 3 eggs, and no yolks. Is it considered "rogue" to have 4 eggs, and 1 yolk? Also, if you eat eggs in the morning for breakfast does that mean you can just have an apple and a vegi for lunch? Thanks!

It sounds like your doctor doesn't follow the Simeons protocol, so you can adjust the recipes here for whatever your doctor recommends.

How many calories are the 4 eggs with the one yolk?

@Barb...130 calories or close to that. I also use cottage cheese to substitute mayo it works just as well with no cheating.
