P3 Peanut Butter Cookies


If you're a Cookie Lover, and really missing cookies while on protocol, I recommend giving this recipe a try. I used almond flour, but think coconut flour would also be worth a try. The z-sweet gives good sweetness, but also causes a "cooling effect" when you eat it, which is kind of strange. Still, these cookies will definitely hit the spot for a Cookie Lover. (Use caution with peanut butter if you're on your first Phase 3 to make sure it doesn't cause a gain for you. Almond butter might be a better choice.)

Peanut Butter Cookies

1/4 cup Butter
1/2 cup Peanut Butter (no sugar) or almond butter
1/2 cup Erythritol, like Wholesome Sweeteners Organic Zero or Z-Sweet
1 tsp Vanilla

Combine the above, then mix in 1 egg.

In a separate bowl, combine:
1 cup Almond Flour
1 tsp Baking Soda
1 tsp Baking Powder

Mix wet and dry ingredients.

Roll about a tablespoon of dough into a ball and place on ungreased cookie sheet. Place dough balls about 2 inches apart. Press down with a fork in a criss-cross pattern. Bake at 350* for about 12-15 minutes until the tops start to turn brown. Remove pan from oven and allow cookies to cool for a few minutes on the pan, then remove to finish cooling on a cooling rack.

Any idea what the calories are?

It just depends on the ingredients you use. You can put them into a program like myplate on www.livestrong.com to get the exact number.

These are so awesome and they travel well. I keep them in the freezer. Once i didnt have enough peanutbutter so used 1/2 & 1/2 pb and almond butter snd they were so good that is how i make them now. I love this site.

Why would peanut butter cause weight gain but almond butter wouldn't? That sounds like "bro-science" a calorie is a calorie..
