P2 Salsa Chicken


This dish was inspired by Melissa's P3 chicken idea, adapted for P2. Delicious and easy!

Salsa Chicken

3.5 oz Chicken Breast (I use 2 tenders)
1/2 cup to 1 cup Salsa

Preheat oven to 350*. Place chicken in baking dish, cover with salsa. Cover with foil and bake until chicken is done, about 20-25 minutes. Serve.

This sounds so good! Just wondering, what type of salsa do you use? Most seem to have sugar in them.

I usually get a fresh salsa, but there are jarred salsas that work too, you just have to look through the ingredients to make sure there is no added sugar.

They will *all* say there is a little bit of sugar in the list of nutrients, but that is because tomatoes naturally have sugar. That isn't where you need to look. Check the actual ingredients for added sugar and as long as there isn't any, it's fine. There should only be tomatoes, veggies, and seasoning.
