P2 Meatballs Gluten-Free (rogue)


I've been trying to make more and more gluten-free food since I feel better not eating gluten, so I made my regular meatballs without breadcrumbs. I felt they needed something to help bind them, though, so I added one egg to a full pound of ground beef, and then divided it into five P2 servings. It's rogue but I think it's fair.

Mini Meatballs, gluten-free

1 lb ground beef
1 egg
1 tsp onion powder
1 tsp basil
1 tsp oregano
1 tsp garlic salt
pinch pepper

Preheat oven to 425. Combine all ingredients in a bowl. Form into small balls and place on baking sheet and cook 7-9 minutes or until done. Drain on paper towels.

I might try egg white, but honestly if you dividing an egg up over the whole pound it can't be an issue. (Loving the blog!)

These wonderful recipes have kept me sane. I'm on day 26 and I'm down 25.2lbs. Like what the other person said in the comments "thank you and keep the recipes coming. I found a meat place where they sell different types of meat I found buffalo pepperoni sticks. Buffalo meat slices and ground buffalo way leaner than x lean ground beef. Try it you won't regret it.
